Famous all over the world, Italian cuisine is much more than just pasta and pizzas. With much of Italy divided into a number of notable regions, restaurants around the country are influenced by the surrounding area's cuisine, history and past inhabitants.
Tuscan cuisine is often loosely based around dishes made with white beans and meat, served with freshly baked bread, while restaurants in northern Italy often serve meals with characteristics from both French and German dishes, also being known for being the home of polenta. Traditional lasagne and many pasta dishes, including tortellini, originate from the Emilia-Romagna region of north Italy, while risotto rice dishes are specialities in the nearby regions of both Lombardia and Piemonte.
Naples is the home of Italy's legendary pizza, which consists of over-baked flat bread, covered with a rich tomato sauce and mozzarella cheese, together with various toppings, including pepperoni, bacon, peppers, chicken, ham and ground beef. Adopted all over the world, pizzas vary from city to city in Italy, with restaurants in Rome tending to serve pizzas with particularly thin bases.
No trip to Italy is truly complete without tasting the ice creams of Naples and Sicily - where the local 'gelato' ice cream is served as a dessert at most restaurants.
