Bolognese people take their food very seriously, giving rise to the city's nickname, 'Bologna the fat'. Local dishes are particularly tasty and are prepared with great care utilising local produce. Some specialties of the city include: bollito misto, a soup dish; lasagna, tortellini and tagliatelle pasta dishes; and cotechino, a type of pork sausage.
Osterie are bars with friendly atmospheres that have evolved into ideal places to snack and eat at. Tratorrie are normally cozy, family-run restaurants where you will be able to find local dishes. Some of the more famous restaurants in Bologna include: Pappagallo, with famous clientele and a superb reputation; Le Stanze, with a fashionable and unique location in a 16th-century chapel; and I Carracci, offering haute cuisine. Pizzas are not part of traditional Bologna cuisine, but the best in the city can be found at Al Tavolaccio, Il Doge and Piedigrotta.
